We use "eel potatoes" sourced from Hamamatsu, Shizuoka Prefecture.These sweet potatoes are as sweet as a dessert even without any toppings, and are baked on a hot plate until the outside is crispy and the inside is soft and fluffy.The saltiness of the butter melting on top of the hot sweet potato further enhances the rich sweetness, creating an exquisite dish.This is a comforting dish that is loved not only by women and children, but also by adults as a snack.
